From Grapes to Gourmet
We craft this versatile fruit paste from our on-site Chambourcin grapes. It pairs beautifully with sharp cheddar or creamy brie, shines in desserts, and tastes incredible with fresh scones and cream. What started as a challenging harvest became a gourmet solution that is both sustainable and delicious.
Ugly Duck Fine Foods: Rescuing Imperfect Produce
The last two years brought poor harvests across our region, thanks to unpredictable weather and rainbow lorikeets. Some grapes were unsuitable for wine, but we didn’t waste them. Ugly Duck Fine Foods, a Brisbane kitchen, transformed these “imperfect” grapes into a premium fruit paste.
Founded to fight food waste, Ugly Duck tackles a global issue: nearly half of all fruit and vegetables are wasted, contributing to 8% of greenhouse gases. In Australia alone, over 5 million tonnes of food end up in landfill annually. By sourcing surplus or “ugly” produce directly from farms, Ugly Duck creates small-batch, preservative-free fruit pastes and salsas that taste as good as they are eco-conscious.

Our Chambourcin & Bay Fruit Paste highlights the rich dark fruit, soft medium body, and slight chocolate undertones of the unique Chambourcin grape. It’s a new way to enjoy this hybrid variety beyond the wine glass.
